Ingredients
- lemon (or yellow) box cake
- 3 oz regular lemon jello
- 3/4 Cup vegetable oil (or however much it says on box)
- 4 eggs (or however many it says on box)
- 1/2 Cup water (or however much it says on box)
- 1/4 Cup lemon juice
Directions
- Grease and flour a 9″x13″ pan, set aside
- Preheat oven to whatever temp it says on the box cake.
- In large mixing bowl combine cake mix and jello
- Add all wet ingredients and stir until all mix is wet
- Mix on low speed for 30 seconds, scrape then Mix on medium speed for 2 minutes.
- Pour into greased pan, and cook however long it says on box
- While it cooks, combine powdered sugar and lemon juice. When cake comes out of oven, poke it all over with a fork and pour glaze all over cake.
- Let cool until it’s cool enough to cut a huge piece out of and eat it like a greedy little kid. 🙂
Notes:
This is the kind of cake you’d get at a church potluck or anytime during the 80’s. I freaking love it. Oh, the jello makes it questionable about being vegetarian. If in doubt you can get vegetarian jello.
