- Grease a 9×5” loaf pan
- Preheat oven to 350°F (175°C)
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup brown sugar
- ½ cup butter
- 2 eggs, beaten
- 2⅓ cups mashed overripe bananas
Directions
- In a small bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream brown sugar and butter with a mixer until smooth and fluffy.
- Add eggs and mashed banana to the butter mixture and mix until just combined.
- Pour wet mixture into the dry ingredients and stir until just incorporated. Do not overmix.
- Pour batter into the greased loaf pan and bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Upgrade to **hedonist banana bread** by slathering it with buttercream frosting once cooled.
- Or, if you’re pretending to be healthy, just warm a slice and hit it with some butter. You deserve it either way.
