B-A-N-A-N-A Bread

Prep

  • Grease a 9×5” loaf pan
  • Preheat oven to 350°F (175°C)

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup brown sugar
  • ½ cup butter
  • 2 eggs, beaten
  • 2⅓ cups mashed overripe bananas

Directions

  1. In a small bowl, whisk together flour, baking soda, and salt.
  2. In a large bowl, cream brown sugar and butter with a mixer until smooth and fluffy.
  3. Add eggs and mashed banana to the butter mixture and mix until just combined.
  4. Pour wet mixture into the dry ingredients and stir until just incorporated. Do not overmix.
  5. Pour batter into the greased loaf pan and bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Upgrade to **hedonist banana bread** by slathering it with buttercream frosting once cooled.
  • Or, if you’re pretending to be healthy, just warm a slice and hit it with some butter. You deserve it either way.
