Ingredients
1 ½ cups all-purpose flour
3 tablespoons white sugar
½ teaspoon salt
4 teaspoons baking powder
1 tablespoon ground cinnamon
2 large eggs
1 cup milk
1 tablespoon vanilla extract
¼ cup butter, melted
Frosting
2 cups confectioners' sugar
2 teaspoons vanilla extract
1 tablespoon milk
Directions
In a medium bowl, combine dry ingredients.
In a separate large bowl, beat together eggs, milk and vanilla extract. Stir in the flour mixture, then add butter.
Heat a lightly oiled griddle or frying pan over medium low heat. Pour or scoop the batter onto the griddle, about ¼ cup.
To make icing, combine confectioners' sugar, vanilla extract and enough milk to make a fluid frosting. Drizzle frosting on hot pancakes before serving.
