Cinnamon Griddle Cakes

Ingredients

  • 1 ½ cups all-purpose flour 
  • 3 tablespoons white sugar 
  • ½ teaspoon salt
  • 4 teaspoons baking powder
  • 1 tablespoon ground cinnamon
  • 2 large eggs
  • 1 cup milk
  • 1 tablespoon vanilla extract
  • ¼ cup butter, melted 

Frosting

  • 2 cups confectioners’ sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon milk

Directions

  1. In a medium bowl, combine dry ingredients.
  2. In a separate large bowl, beat together eggs, milk and vanilla extract. Stir in the flour mixture, then add butter.
  3. Heat a lightly oiled griddle or frying pan over medium low heat. Pour or scoop the batter onto the griddle, about ¼ cup.
  4. To make icing, combine confectioners’ sugar, vanilla extract and enough milk to make a fluid frosting. Drizzle frosting on hot pancakes before serving
