Ingredients
- 1 ½ cups all-purpose flour
- 3 tablespoons white sugar
- ½ teaspoon salt
- 4 teaspoons baking powder
- 1 tablespoon ground cinnamon
- 2 large eggs
- 1 cup milk
- 1 tablespoon vanilla extract
- ¼ cup butter, melted
Frosting
- 2 cups confectioners’ sugar
- 2 teaspoons vanilla extract
- 1 tablespoon milk
Directions
- In a medium bowl, combine dry ingredients.
- In a separate large bowl, beat together eggs, milk and vanilla extract. Stir in the flour mixture, then add butter.
- Heat a lightly oiled griddle or frying pan over medium low heat. Pour or scoop the batter onto the griddle, about ¼ cup.
- To make icing, combine confectioners’ sugar, vanilla extract and enough milk to make a fluid frosting. Drizzle frosting on hot pancakes before serving
