Ingredients
1 cup quinoa
2 cups water
1/4 cup extra-virgin olive oil
2 limes, juiced
2 teaspoons ground cumin
1 teaspoon salt
1/4 teaspoon red pepper flakes
1 cup halved cherry tomatoes
1 (15 ounce) can black beans, drained and rinsed
3 green onions, finely chopped
Directions
Rinse Quinoa in strainer until water runs clears.
Bring 2 cups water and quinoa to boil in saucepan. Turn down to simmer, cover and cook for 15 minutes. Once done, drain any excess water and set aside to cool.
Whisk oil, juice, cumin, salt & pepper flakes together.
Toss dressing with quinoa, tomatoes, beans and green onions.
