Tempeh BBQ Sandwiches

Ingredients

  • 8 oz Tempeh, cut in thin strips

  • 2 cups water

  • 1/4 Cup low sodium soy sauce

  • 2 Tablespoons honey (or maple syrup if vegan)

  • 3/4 Cup BBQ Sauce

  • Coleslaw mix

  • 4 Hamburger rolls

Directions

  1. In small pan, mix water, soy sauce and honey together and heat to simmer. Add tempeh and cook for 10 minutes.

  2. Drain and mix tempeh and BBQ sauce together in dish. Toss to ensure all tempeh is covered. Marinate for 30 minutes to a couple hours.

  3. Heat medium skillet and spray with cooking spray or a bit of olive oil. Add tempeh and cook until bubbly and hot, 5ish minutes.

  4. Serve on rolls with slaw.
